Organic tomatoes: benefits and properties
Organic tomatoes are the best source of the carotenoid pigment lycopene, which gives them their red colour. Organic tomatoes contain all four major carotenoids: alpha and beta carotene, lutein and lycopene. Organic tomatoes are rich in vitamin C and contain small amounts of vitamin A, folate and potassium.
Several studies have shown a correlation of reduced incidence of macular degeneration, prostate cancer, stomach cancer and cardiovascular disease in those who consume high quantities of food containing lycopene. Organic tomatoes provide significant amounts of bone strengthening vitamin K and some research suggests that lycopene also supports bone health.
